The findings of our project for the UK Food Standards Agency (FSA) on the quantification of the controls that should be placed on meat prior to mincing has just been published by the FSA.
The main objective of this project was to collect and examine evidence from UK meat processors on the microbiological quality of mince produced from meat of different ages in order to quantify what controls should be placed on meat prior to mincing.
