New projects: Mechanically Separated Meat (MSM) production

We are pleased to announce that we have just started a research project (FS514103), with the University of Lincoln and Leatherhead Food Research, for the Food Standards Agency to provide a better understanding of the microbial safety of mechanically separated meat (MSM) from poultry and pork and how it compares to fresh cuts of meat, meat preparations and minced meat products.
The findings of this project will be used to support the Agency’s assessment of whether current restrictions on the use of MSM are appropriate and proportionate for the protection of the consumer. The project will build on a previous research project carried out by FRPERC and commissioned by the FSA entitled “Description of the processes used in the UK to manufacture MSM and former DSM meat products from poultry and pork and an initial assessment of microbiological risk”.
